Nothing commercial has been made that incorporates the wiimote, but several projects have written scripts in GlovePie to use the wiimote as an emulated controller. Check out this set of videos in this thread to get an idea of what's out there.

There is a mod for crysis with source code that adds wiimote control scheme to the game.
google wiisis, or search for it on crymod.com. (dont have links right now, and too lazy to get them.
