Should I buy a AA or N battery holder, Is their an actual difference, and if I get a AA do I need a resistor?

Only real differences between AA, AAA, or N is the physical size and how long it will provide power.

all of them are 1.5Volts which if you use the more common IR LEDs you will not need a resistor. If you use more than one you will need a resistor.

You always need a resistor to limit the current. Even if the LED forward voltage is equal to your battery voltage. Use this calculator: http://ledcalculator.net it's very nice.
