Can anyone explain the difference between the TSAL6200 and the TSAL7200?
Has anyone done a comparison between the 6100 and 6200 (10 degrees vs 17 degrees)?

From the datasheets:

TSAL6200 is a high efficiency infrared emitting diode in GaAlAs on GaAs technology, molded in clear, blue-grey tinted plastic packages.

TSAL7200 is a high efficiency infrared emitting diode in GaAlAs on GaAs technology, molded in a clear plastic package.
That appears to be the only difference.

I'll "assume" that IR can pass through clear plastic and clear blue-grey tinted plastic just about the same.

Otherwise I'm going to need to order both and test them.

The rest of the datasheets are completely identical, so it's almost certainly only a cosmetic difference.
