Yes you can but you have to remove the IR filter of the wiimote.

Your thinking is right because I did the same thing. I put a laser pointer (20MW) on top of a gun, replaced the wiimote in front of the target, used commercial shooting games it works perfect. The problem you have to solve is one shot-one single-very short laser pulse.

Possibilities are endless of course, but technically I doubt the wiimote can track other light sources. Again there are webcam solutions which you can track different colors or to me the best way without using any light source, for the sake of the machine gun solution, you can use MEMS technology to simulate the balistics effects of the bullet and by a software, know where you are shooting at any time.
