I'd like to find a way to start and connect to the wiimote remotely. If the wiimote were mounted from above (from the ceiling) it would be more stable, less likely to get broken and would not have a obstructed view of the wall/board. Reaching it to start it and connect, and then place it back up there is the problem that I want to avoid. Can this be done?

This can be done fairly easily.  What you need to do is pull the correct pin on the sync button low and the remote will go into sync mode.  Getting at the pins of the reset button isn't too bad, a dremel in the right two spots (current-gen wiimotes) or one spot (first-gen wiimotes) and it's easy to fish a wire from the battery compartment through to  front and solder it on to the appropriate pin, assuming you have a pretty pointy soldering iron.  I had to do this to several wiimotes, so I eneded up fabing a small board with a 2.85V regulator (simulates 2 mostly-full AA batteries) and a transistor to allow remote syncing.  If you're interested I could post pics of the hardware mod and a schematic/gerber for the board.
