I'm wondering if there's something else that can be used besides an LCD projector?  If I use a monitor, we can't touch it because it will ruin the monitor.  Can I put something over the monitors that will protect them?  Can I purchase a touch screen monitor?  --  or does that eliminate the need for the Wiimote?  HELP!  I want mini interactive whiteboards in my classroom for the kids to use independently and I don't know how to make it work.

You can take a look at the guide written by Ben Jones about the use of other screens for the interactive whiteboard

If you are purchasing a touch screen monitor, you will not need the Wiimote.

As your students are going to use the interactive whiteboard, there is possibility of the screen getting scratched.
You may need to get a plastic/glass sheet such as using acrylic to cover the whole screen. If you are using a thick transparent sheet, you may encounter some lack of continuous tracking with the Wiimote when using with an IR pen. This may be due to IR light emitted by the IR pen to be passed through the physical material. For this, you may just need to put the Wiimote closer to the screen or readjust the positioning of the Wiimote.
